The pure starch of a bulbous-rooted plant, growing in the West Indies, and other warm climates. The starch of the potatoe has precisely the same properties, and, from the superior cheapness of the latter in this country, it forms a common substitute for the foreign production, which is difficult to obtain in the retail shops unadulterated. Under the article Potatoe will be found a full description of the mechanical process employed in extracting the starch from that root.
