Required : One marrow bone. A slice of hot toast.
Half a teaspoonful of chopped parsley. Half a teaspoonful of lemon-juice. Salt and pepper.
Take the marrow from the bone, and put it into a pan of slightly salted boiling water; let it boil for one minute, then take it out of the water and drain it well. Put it into a small pan with the chopped parsley, lemon-juice, and a good seasoning of salt and pepper. Make it very hot, mix well, and then spread it on the toast.

Sprinkle it with pepper, and serve it as hot as possible; otherwise it will not be worth eating.
