For those who prefer a plainer cake this mixture can be used.
Required : One pound of flour. Half a pound of butter. Half a pound of castor sugar. Half a pound of sultanas. Quarter of a pound of mixed pee). The rinds of two lemons. One teaspoonful of baking-powder. Quarter of a pint of milk. Four eggs.
Line a cake-tin with buttered paper. Beat the butter and sugar together until they are in a soft, white cream. Beat the eggs until they are frothy, then add them gradually to the butter and sugar. Beat the mixture very thoroughly ; then add the flour and baking-powder, after first passing them through a sieve. Mix together the cleaned sultanas, chopped peel, and grated lemon-rinds, then stir them lightly but thoroughly into the mixture ; lastly, add the milk gradually. Put the mixture into a prepared tin, and bake it in a moderate oven for about two hours. When done, put the cake on a sieve, and leave it until cold.
