Required: Ten gallons of water. Seven pounds of coarse salt. Three and a half pounds of coarse brown sugar. Half a pound of saltpetre. Half a pound of bruised white peppercorns. Half a pound of bruised ginger. One ounce of bruised cloves. Half an ounce of pimento seeds.
Boil all for two hours, then skim well, and use when cold. If the meat is only required to be spiced, leave it in for forty-eight hours.
