Required: Cold boiled potatoes (about a pound).
Four tablespoonfuls of milk.
Two tablespoonfuls of butter.
Salt and pepper.
Chopped parsley.
The juice of half a lemon. (Sufficient for four.)
Slice the potatoes about a quarter of an inch thick, and put them into a saucepan with the milk, butter, seasoning, and a little chopped parsley.
Heat the whole thoroughly until just on the boil, stirring all the time, then add the juice of half a lemon.
Put the potatoes into a deep dish, and serve them very hot.
Cost, 4 1/2d.
