Ingredients:
2 c. cooked lima beans bread crumbs 1/4 lb. cream cheese 3 pimentoes

1 c. chopped English walnuts
1 c. bread crumbs
1 tbsp. butter juice of 1/2 lemon salt and pepper
2 tbsp. chopped onion

2 qts. spinach (cooked) 1 c. grated cheese salt bread crumbs
1 tbsp. butter

Ingredients:
1 tbsp. butter 3/4 c. corn
1/2 c. tomato puree 1 tsp. salt
2 c. grated cheese 1 pimento 2 egg yolks 1/2 tsp. paprika
Method:
Heat the puree in a double boiler, add the butter, corn, salt, paprika, and pimento. When the mixture is hot, add the grated cheese; and when the cheese is nearly melted, add the egg yolks slightly beaten. Allow the total mixture to cook until thick. Serve on toasted bread.
Ingredients:
1 c. rice
2 tbsp. butter
2 c. tomatoes
1 tsp. salt
1/2 c. grated cheese
4 tbsp. chopped green pepper
Method:
Wash rice and cook in boiling water until soft. Melt butter in saucepan, add green pepper and sauter 5 minutes; add cooked rice, tomatoes, and salt. Let cook until tomatoes are soft. Add grated cheese and continue cooking until cheese is melted. Serve at once.
Ingredients:
1/2 c. rice
1 tbsp. butter 1 c. boiling water
1 3/4 c. hot water salt pepper
1 c. tomatoes
Method:
Wash rice and brown in the butter. Add water and steam until water is absorbed. Add the tomatoes and cook until rice is soft. Season. A little grated cheese may be added.
Ingredients:
1 1/2 c. grated cheese 1 tbsp. flour 1/4 tsp. salt cayenne whites 3 eggs cracker dust
Method:
Mix cheese with flour and seasonings. Beat whites of eggs until stiff and add to the first mixture. Shape in small balls, roll in cracker dust, fry in deep fat, and drain on brown paper. Serve with salad course.
Ingredients:
1 c. grated cheese
1 c. fresh bread crumbs
2/3 c. flour
1 tbsp. butter
1/4 tsp. salt 1/8 tsp. pepper cayenne 1 tbsp. milk
Method:
Cream the butter, add flour, crumbs, grated cheese, and seasonings; mix thoroughly; add milk. Roll 1/4 inch thick, cut 1/4 inch wide and 6 inches long. Bake until brown in a moderate oven. Serve with salad course.
Roll out plain or puff paste until one fourth of an inch thick. Spread one half of it with grated cheese. Fold over the other half and roll out again. Repeat the process three or four times. Cut into strips and bake. Serve with soup or salad course.
