In certain cases of obesity where tomatoes are allowable, this gives variety and is exceedingly palatable.
Chop fine or grind a quarter of a pound of round of beef, season it with a half teaspoonful of salt, and a dash of pepper, if admissible. Cut the stem end from a large solid tomato, scoop out the seeds and core, leaving the skin with a comfortably thick wall. Put the meat lightly into the tomato, and bake it in the oven fifteen or twenty minutes. Transfer it to a heated plate, put a little butter in the center and send it at once to the table. The meat should be smoking hot to the very bottom, a little rare, and the tomato soft.
