3 eggs
2 cups white sugar
1 cup canola oil
1 TBSP vanilla
1 tsp. salt
1/4 tsp. baking powder
1 TBSP cinnamon (less if you prefer)
2 tsp. baking soda
1 cup chopped nuts
4 TBSP Hershey's cocoa
2 cups grated zucchini
2 cups flour
In a mixer add eggs, white sugar and canola oil--beat. Add vanilla, salt
and baking powder--beat. Add cinnamon and baking soda--beat. Add
cocoa--beat. Add grated zucchini--beat. Slowly add flour--beat. Add
chopped nuts--beat. Pour batter into a greased 9 x 13 cake pan. Bake
at 350 degrees for 50-60 minutes--test with a toothpick for doneness.
Frost as desired.
